What to do in the long winter season?
...If your specialty for example Stamped Concrete.

well you might be out of luck for a variety of different reasons:

1, Subzero temperatures
2, Rain
3, Snow

Too much risk is involved placing it, and never mind trying to seal
your stamped concrete in this weather. Your best choice would be
to wait the winter weather out and do it in mild weather.

In the mean time get other concrete related work you'll be glad you did.
